DAOU Vineyards isn’t necessarily a name that all will have heard of, but this pioneering estate set high in the mountains of central California’s Paso Robles is tipped by those in the know to be the US’s next big thing. Gone are the days of Napa’s dominance when it comes to new-world Bordeaux blends and spearheading the movement away from ‘The Valley’ is Daniel Daou.
Daniel was one of the first to bring Cabernet clones to Paso Robles and with an unparalleled focus on viticulture, he created an intense vine density planting structure – up to 3,630 vines per acre on steep slopes. Poetically described as having the “mind of a scientist and the heart of an artist”, Daniel created a proprietary phenolic system based on his palate that allows him to unlock some of the highest-level phenolics in the world for Bordeaux varieties, resulting in intensely coloured, age-worthy aromatic wines. Additionally, he has created a protocol in the vineyard that allows him to manoeuvre through climate change ensuring no damage to the grapes in the case of heat spikes.

Described by DAOU as their “crown jewel” the 2019 vintage certainly does shine. Scoring a fantastic 97+ points from The Wine Advocate’s Erin Brooks her reaction can be nicely summed up in one word, “Wow!”.
A lot of love goes into producing Soul of a Lion, a wine produced in tribute to the Daou brothers’ father. Each bottle of Soul of a Lion represents a nine-year journey of passionate curation. The fruit for Soul of a Lion is identified early and reverently tended through harvest. The berries are optically sorted to ensure pure fruit integrity, and the wine is made exclusively from free-run juice. The winemaking journey begins with rare bois rosé French oak barrels whose staves are seasoned in the elements for five years prior to coopering. The wine is then aged for nearly two years in these special DAOU “5-Year barrels”. Finally, it is held for extended bottle maturation prior to allocation ensuring that each vintage has achieved perfection upon release. The resulting wine displays a rare trifecta of power, density and elegance.
Arriving early next year, this is a wine of extremely high quality that will hold its own against the best of the rest in any wine cellar.

The 2019 Soul Of A Lion is a blend of free-run Cabernet Sauvignon (77%), Cabernet Franc (14%), and Petit Verdot (9%), aged 22 months in 100% new French oak. Opaque ruby in color, it offers aromatic contrast between dark, savory cherry fruit, chargrill and graphite, and top notes of green pepper and rose petals. The palate explodes with detailed flavors and its tannins are already resolved and chocolaty, with seamless acidity and exotic spicy layers emerging on the extended finish. Wow! | WA

Inky magenta. Primary, mineral-accented cassis, cherry pit, licorice, roasted coffee and incense aromas reveal oak spice and pipe tobacco flourishes.
